Perfect Chewy Chocolate Chip Cookies

Have you been scanning the web for the perfect soft, chewy, chocolate chip cookie recipe? The one that doesn’t turn hard and crumbly after only two days in the cookie jar?

Look no further! Cookie perfection is ridiculously easy to achieve. Here’s what you’ll need:

Chewy Chocolate Chip Cookie Recipe

  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed light brown sugar
  • 2 eggs
  • 2 tsps. vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 2 tsps. cornstarch
  • 2 cups semisweet chocolate chips

Start by preheating your oven to 350°and lightly greasing or placing parchment paper on two heavy cookie sheets. It would be a shame if your perfect cookies decided to stick to your cookie sheet!

Next, cream the butter in a large bowl. Add the sugars, and mix again until fluffy. Add the eggs one at a time. When they’re fully incorporated, stir in the vanilla.

In a separate bowl, use a whisk to stir together the flour, baking soda, salt, and cornstarch. Mixing your dry ingredients in a separate bowl helps ensure everything is evenly incorporate in your cookie dough. It’s a bit unorthodox, but the cornstarch is the star here! It’s tasteless, and you can’t see it, but these cookies’ chewy texture comes from the cornstarch!

After the dry ingredients have been whisked together, add the flour mixture ¼ cup at a time to the butter and sugar mixture until it is fully incorporated. The dough should form up nicely and be slightly sticky, barely clinging to your fingers.

Next, add the chocolate chips. You can mix in with your stand mixer, but mine tends to break the chips into tiny pieces, which I do not like, so I mix them in by hand with a spatula.

Using a cookie scooper or two spoons, arrange the dough on your cookie sheets. Bake for 13 minutes, or until the edges are golden brown. Allow to cool to room temperature on cooling racks before storing in a cookie jar!

These cookies remain soft and chewy for at least a week. Store them in an airtight container for an even longer life, but cookies rarely last more than a week around here!
